So Sweet Southland Carrots
#44 Eat - Supporting local is as simple as spotting some Southland grown carrots in the supermarket. Owner of Invercargill based Southern Cross Produce, which has the So Sweet range, Matthew has had the business since 2001. He's the 5th generation of commercial fruit and/or vege growers in his family. Southland is perfect for growing parsnips and carrots (So Sweet's two top products) with cold soil temperatures helping develop the sweetness. I learnt that they are ideally harvested after a frost or two with the freezing temperature allowing the conversion of starch stores into sugar. Perfect for roast carrot, quinoa and haloumi salad (from Stuff.co.nz) for dinner
