#315 Eat - Wild venison salami by Gathered Game in Southland. Locally owned by Chris and Sally, their handmade product starts with wild deer from Fiordland that is then processed in Lumsden. Chris naturally cures his meats using traditional methods - dry aged with spices and herbs. Great packaging and I love that the meat is traceable, you can 'track your game' on the website, and find out where the wild deer was gathered. Today it was delicious with homemade pinot noir jelly, cheese and bubbles as part of a birthday lunch for my amazing Mum.
