Black Quail Truffles
Périgord black truffles! From our friends at Black Quail Estate in Bannockburn. They planted their inoculated hazelnut trees in 2003, and patiently waited for 12 years and were finally rewarded with a crop of 502g in July, 2015. This melanosporum fungus fruits from June to August about 10cm below ground on the roots of the host tree. The fragrance is so intense, it can flavour eggs and uncooked rice by simply sitting with them in the fridge. I’ll share some of my dishes soon…!
